What Product Is Right For My Project

Covering A Cake

Both fondant and covering chocolate have the smooth consistency and elasticity to be rolled and draped over cakes and other baked goods. These products are exceptionally good for covering sculpted/novelty cakes.

Making Flowers

All products can be used for flowers work but the specifics of your design and location will determine which is the best medium. 

Fondant / Suitable 
Dries semi-firm and is available in a wide variety of pre-mixed colors. If you have fondant and want to create more delicate flowers, adding tylose or cmc powder will allow the flowers to dry firmer. Fondant is water based and will dry quickly, making working times shorter.

Gum Paste / Best Results
Dries extremely firm, quickly. Rolls out very thin, creating professional, life-like petal and leaf work. Gum paste creations are delicate and must be handled with care. Gum paste is water based and will dry quickly, making working times shorter.

Covering Chocolate / Suitable
Can be used in silicone floral molds and used to roll and shape larger floral pieces. The covering chocolate is best used for floral work on small treats that will be eaten as it will remain soft and easily chewable. Covering chocolate is sensitive to heat so ensure that your finished piece will be showcased in moderate temperatures and not in direct sunlight.

Modeling Chocolate / Best Results 
Rolls over very thin and is workable over long periods of time making it a great medium for beginners to do floral work. Modeling chocolate is sensitive to heat so ensure that your finished piece will be showcased in moderate temperatures and not in direct sunlight.

Modeling

Both gum paste and modeling chocolate have the ability to hold shape. Gum paste will dry quickly and firm while modeling chocolate will remain workable over time.

Rolls paper thin
Sets & dries firm very quickly
Satin matte finish
Gluten Free, Nut Free, Dairy Free, Vegan, Kosher Pareve

Considerations:

Because of it's water based formula, it can dry out easily if overworked or left exposed to air

Finished pieces are very delicate and can break easily

MODELING CHOCOLATE

Uses:

Model, sculpt & shape
Creating a sturdy structure - holds up against gravity and sets quickly
Creating a figurine with extra stability

Benefits:

Can be worked and reworked over long periods of time
Creation can be used right away and hold up without having to dry
Sets firm but remains pliable
Can be reworked when warmed
Delicious chocolate flavor
Comes in a variety of pre-mixed colors
Gluten Free, Nut Free, Vegetarian, Kosher Dairy

Considerations:

Its oil base makes the product sensitive to heat and direct sunlight

Need to work and display the finished piece in a dry, cool environment

Can be hard to knead, microwave at lowest setting in 5 second intervals to soften
