Satin Ice Cake of the Month:
Romanticizing over the Pantone Color of the 2015 Marsala - "Baroque Love" was born. The intricate gold decaling along with the handmade gum paste flowers had us falling in love with this Victorian themed cake and crowing it the December Cake of the Month!
Name: Meritxell Montserrat - Barcelona, Spain
Education: Pastry chef at Culinary school Hoffman - Cake Designer
Describe the cake, details and techniques: Wendy and Robert fell in love with our "Baroque Love" which we made for a publisher for inspiration - in which the protagonist was the color Marsala (Pantone color 2015). We renewed the design for this adorable couple - changing the arrangement of the flowers; peonies, English roses, hydrangeas and rose births and placing them between floors and a beautiful bouquet to top the cake. All the sugar flowers are hand made with gum paste and the garlands and trims were all painted by hand with edible gold paint.
What is the inspiration for this winning cake?
Opulence and beauty of the palace of Versailles - loaded with applications in gold, full of garlands and decorations.
How much time did you spend creating this cake?
The elaborate flowers took about 5 days of work. I love making sugar flowers and even though it is the most developed part of my work, I do enjoy it the most. To bake, fill and prepare took another 4 days.
What do you do while you work? I always work with background music which helps me concentrate. What I listen to the most is Amy Winehouse or any classic Motown!
