Education: I am largely self-taught in pastries because in Spain back in 2000 there were zero cake designers. I would practice my cake craft at home with no Internet, but later on I traveled to the UK to take several courses in cake decorating and sugar flowers. Meanwhile, I studied pastry in the Baker's Guild for one year - then in 2008 I opened my own business and continue to learn and grow every day.

Describe the cake, details and techniques: In this cake various techniques were used to achieve a "mosaic" effect. I mixed food dyes with powder and applied with cotton balls to achieve a gradient. Then the "stained glass" was outlined by paintbrush with silver coloring gel - and extreme patience!
What is the inspiration for this winning cake?
Inspired by the spectacular work of the brilliant Spanish Catalan architect Antoni Gaudi - I was trying to imitate his special mosaic technique and sinuous forms that are present in all of his works. The cake was actually a wedding cake and the bride was from Japan and the groom was Catalan - but both were big fans of the work of Gaudi.
